French artist Bryan Raquin’s contribution to The Art of Cutlery, a gyuto named “Hojou,” on show during summer 2024 in Tribeca, NYC, is a classic, refined Raquin culinary tool embellished by award-winning Japanese engraver, Mali Iri-Cros. The blade is hand-forged from house-made san mai steel with a core of small-batch 145sc carbon steel, water quenched, and sharpened on a progression of whetstones. The forge-finished flats on the blade’s left side are engraved by Mali with striking and detailed dragon imagery. The handle is shaped from locally sourced burnt wine barrel oak. The piece is displayed on a burnt oak and brass stand. Built for regular use, the edge arrives razor-sharp.
