Austrian artist David Wolke’s contribution to The Art of Cutlery, a champagne sabre named “The Sturgeon,” on show during summer 2024 in Tribeca, NYC, positions this opulent, ceremonial tool, and the ‘mother’ of his ROGEN (‘Caviar’) Collection of jewelry made from recycled gold, as both culinary art, and a commentary on sustainability in the luxury sphere. Replacing scarce and overfished resources with hand-hewn, heirloom objects made to last generations can fulfill the needs of all the globe’s stakeholders. Forged by hand from solid carbon steel, the entire work is crafted with one-piece construction, the handle and blade’s spine representing the sturgeon’s iconic scutes. A mirror-polished edge and tip sweep upwards forming its snout. The Sturgeon is presented on a tabletop display stand with mirrored surface that reflects the beauty of the artwork. David has finished The Sturgeon with an unsharpened edge designed for sabrage.
