Head turning, homemade Stella mosaic damascus steel is shaped into a 255mm / 10″ Western Chef profile that delivers tall, slim, symmetrical bevels above a very thin, very, very sharp edge. At the heel the powerful, workhorse blade stands 57mm tall, allowing it to rock on the board and move easily through the largest and densest ingredients. The spine remains robust and rigid in the rear while tapering steadily toward a slim yet tough tip, the front portion of the blade enjoying a touch of lateral flexibility due to Aaron’s precise honing and purposeful hardening process. The damascus pattern itself is nothing short of stunning, the bold, bright, nickel-rich star elements surrounded by pulsating layers of closely packed, alternating carbon alloys to produce a mesmerizing effect. Continuing into the handle’s forged integral bolster, the chatoyance and polish of the damascus catches the light in wonderful ways. For comfort and control over this kitchen workhorse is a handle as spectacular as the blade: purple-dyed, fossilized mammoth tooth is sculpted into the artist’s well-known Western form, ergonomic and versatile, for chopping, slicing, and dicing all day long.
