The latest inhead-turning culinary fashion by Australia’s James Oatley is this superbly crafted gyuto designed to slice with a near-unprecedented degree of efficiency and precision thanks to its superb geometry including symmetrical compound bevels and high-polish, convex cutting edge. Balanced just in front of a 64mm-tall edge heel which is positioned below the front fingers to maximize control and use of the 210mm / 8.3″ long edge,this one-of-a-kind kitchen knife is nimble and natural in the hand in all of the ways that James’ work is so well known for. The tall profile, razor-sharp, near-zero edge, and full-distal taper along the spine which leads to a fine, needle-like tip, help make this a daily-use chef’s tool like no other. Aided by a backward leaning, rounded blade choil and three-way faceted spine for comfort in the pinch grip, the round-to-tapered handle of dyed and stabilized maple offers comfort and control as well as the ability to disassemble the handle for maintenance via the single domed, brass pin. A custom saya with brass pin is included.
